Kale Artichoke Dip

Creamy, Cheesy, & Comforting

This the perfect combination of healthy ingredients mixed with gooey cheesy ones… And that is EXACTLY the type of ‘balance’ I’m looking for in my life! ;)

It is a variation from the more well-known Spinach Artichoke Dip. I got this recipe from the back of the Kale bag of Super Fit Greens. And I highly recommend it! It’s perfect to warm you belly on a cold winter day, its comforting, and you get your veggies in!

So simple! And so satisfying! When I make this again, I will add more cheese! And perhaps try a blend of both kale and spinach.

I also turned this dip to be a sauce for pasta!

Ingredients

2 TBL Olive Oil

14 oz Artichokes

8 oz Light Cream Cheese

1/2 Cup Shredded Mozzarella

1/4 grated Parm

1/4 tsp Black Pepper

1 Cup Greek Yogurt

10 oz Kale Leaves

3 cloves garlic

Instructions

Set the oven to 350 degrees.

Quickly Chop the Artichokes in a Food Processor or Hand Chop

Sauté Kale with Garlic and Olive Oil on the stove until tender.

While the Kale is sautéing, combine remainder ingredients.

Add the Kale to a Food Processor for a quick chop.

Stir in the Kale.

Transfer the mixture to an oven dish. Bake for 25 minutes.

Serve with a French Baguette
