Red Beet Tortillas
I feel like I don’t eat nearly as many beets as I should. However once I do eat them I am quickly reminded how tasty they are when combined with other flavors and can be served so many ways. Beets have amazing qualities that are super beneficial for your health. I recently discovered Salus Organic Red Beet Crystals from the European organic wellness company, Floradix.
The Salus Organic Red Beet Crystals are nothing short of magical! I am hooked on them because they can be used in SO many various ways for cooking and baking. They are a superfood! And can easily be added to anything, without leaving a strong taste or smell of beets. My favorite thing about these crystals is that they can completely replace any food dye for baking. This is the perfect solution for replacing food coloring for a natural bright coloring.
I decided to do some experimenting and added some Salus Organic Red Beet Crystals to a basic tortilla recipe.
I know tortillas as just as easy to buy at the store, but they are SO easy to make and are extra tasty made hot and fresh. I simply added beetroot crystals to the water and cornflour. This created a delight to the eye….hot pink tortillas, for a taco dinner.

Red Beet Tortillas
Lemon Garlic Salmon
THE RADISH
The basic radish is often overlooked. It certainly isn’t a veggies that taste the best raw- for it’s very strong bitter taste. However when pickled, they are quite addicting, and can easily compliment many dishes or be used for garnishes.
What You Need
Mandoline Tool- recommended!
Radish - Approx. 20 radishes.I prefer these beautiful colorful ones from Trader Joe’s
1/2 Cup Red Wine Vinegar
1 TBLS Sugar
1.5 TSP Salt
1 Cup Warm Water
Recipe
Wash radish and thinly slice all the radish. I highly recommend using a mandolin tool to slice the radish into very thin, almost translucent, even slices. Otherwise just carefully slice with a knife.
Place the radish in a jar.
Combine Vinegar, Sugar, Salt, & Warm Water in a bowl until mixture is dissolved.
Pour into the Radish. Let sit for an hour. After an hour, you can store in fridge for up to 3 weeks
I truly could not believe HOW tasty these are, as well as so simple to make with basic ingredients already in the panty. I pretty much ate the whole jar within a day.
THE HANDMADE TORTILLAS WITH BEETROOT
Tortillas are an absolute commodity in our Mexican-American household. They are served with almost every meal. Every now and then, I like to make homemade tortillas instead of store-bought ones (mostly to impress my Mexican husband ;) ) And they are SUPER easy to make- consisting of only masa corn flour & water. The trickier part is perfecting creating the tortilla shape and frying them to perfection.
SO… I added SALUS ORGANIC RED BEET CRYSTALS to the mix. Not only are they a SUPERFOOD, but they created these beautiful hot pink tortillas. They simply add nutrition & color, without leaving a strong beet taste.
This is such a fun way to be creative in the kitchen or be an enticing meal for your children. I even gave my one-year old baby a couple balls of dough to play with while I was cooking. She loved it and it was just like play dough but would not hurt her if she tried to eat a piece.
What You Need…
Masa Harina- I use the Maseca Corn Flour. It can be found at any or most grocery stores
Water
Salus Organic Red Beet Crystals
Cast Iron Tortilla Press- Recommended but can be hand rolled and smashed with a glass dish.
A Plastic Bag- I find a ziplock bag cut on the sides works bests
A Pan- for frying
Recipe
Mix Flour & Water
2 Cups of Flour + 1.5 Cups of Water = 20 Tortillas
1 Cup of Flour + 3/4 Cup of Water = 10 Tortillas
Dissolve a TBLS of Salus Organic Red Beet Crystals into a small splash of water, & Pour into Flour Mixture
Check the consistency of the flour. The dough should absorb all the water, be damp and easy to knead. Knead well using your hands into a large ball of dough with a consistent texture. Have the bag of flour handy to use on your hands.
Preheat a pan/skillet on medium-high heat.
Grab a piece of dough and roll it into a ball about the size of a golf ball (1.5 in diameter).
Place the plastic bag evenly on both sides of the tortilla press, place a ball of dough in the center. And carefully press down the ball of dough. Carefully peel the plastic off the top of the tortilla, flip on your other hand, and peel the other side of plastic off. Or take a large glass dish to press down evenly.
Carefully set in hot pan. Let fry in total around 1 minute 45 seconds. Make sure to flip it to each side every 30 seconds.
Repeat for the rest of the dough. After each tortilla is done frying set inside a cloth towel to keep warm.
THE LEMON GARLIC SALMON
I find Salmon one of the easiest things to make. You can create so many different combinations of condiments to marinate the salmon in and bake it.
Preheat oven at 400 degrees.
Take Fresh Salmon Fillets & generously salt each side. Add pepper if you like as well. Put skin-side down into parchment paper or a greased baking dish.
Combine Olive Oil, Juice of 1 Lemon, a large spoonful of chopped Garlic, & any other seasoning of your choice such as oregano, parsley, or dill.
Let cook for 7 minutes. Let cool, and roughly pull apart with a fork.
THE FINAL RESULT…
Warm Red Beet Tortillas
Add the Lemon Garlic Salmon into Tacos
Generously top with Pickled Radish.
Add roughly chop Cilantro.
Serve with Lime Wedges.
