Spinach Walnut Pesto
This is one of my absolute go-to recipes. It is uncomplicated, and can be made in just a few minutes. Simply add all your ingredients to a food processor to blend. It contains… walnuts, spinach, parmigiana, olive oil, salt and pepper. I use it for a sauce on pasta, but can also be used on top of toast, or as a dip. It is an excellent alternative to the classic basil pesto. It offers a lot of protein and is very filling. My daughter is two and this is one of her favorite meals, she's been loving it since she was a baby!
Here is my recipe for Spinach Walnut Pesto Sauce on Pasta
Makes 2 Servings/ 10-15 Minutes to Make
Ingredients
2 Cups of Spinach
1 Cup of Walnuts
1/2 Cup Parmigiana
1/4 Cup of Olive Oil
1 Clove of Garlic
1 Tsp Salt
1/4 Tsp Pepper
2 Cups of Short Pasta (or any pasta of your choice)
How to Make…
Boil a salted pot of water. Once boiling add your pasta.
Add all ingredients to a food process or blender. Blend until smooth. Taste test it and see if it needs a little more salt or olive oil or garlic.
Heat a skillet with a couple teaspoons of olive oil. Add the pesto blend to heat on low.
Take half a cup of pasta water and pour in a little bit. You may only use a couple tablespoons of pasta water but keep extra just in case. This creates a delicious sauce.
Drain your pasta and add directly to your pan of pesto. Mix together.
Serve in a bowl, and add more parmigiana to your heart’s delight!
